I made my aunts recipe for our NYE dinner after postponing it for the longest time. Truthfully, I was scared to try it for a couple reasons: the type of ingredients, I didn't know how long it would take, and the end result.
I used garlic& chile chipotle, something we don't use around here. Cooking the chicken was actually a lot faster than what I anticipated. The end result, well... Definitely add more chile next time and don't forget to add salt to the chicken while it cooks. Other than that, it actually came out pretty decent.
My husbands aide of the family came over and by the end of the night, the tinga, the recipe, was gone! Husband and I were both surprised. I think I still am. I keep telling myself, either they were really hungry or it actually came out good! (I'd like to believe the last).
Pregnancy days are getting a little harder because I am getting a whole lot more tired a whoooole lot quicker. So, I welcomed the new year in bed listening to what seemed like endless fireworks thanks to my neighbors.
I have faith that this new year will bring in many new changes in my personal and family life. I wish the best for everyone! Happy 2013.
